By fermenting half the wine in stainless steel and half the wine in French oak and choosing against Malolactic fermentation, she ends up with a balanced and elegant wine that allows the Chardonnay character to truly shine through.less.
Winemaker's Notes:
We don’t like over oaked or manipulated wines and we don’t believe malolactic fermentation is right for this Chardonnay. The California sunshine produces enough lush roundness in the fruit already and we prefer to accent the natural crisp acidity instead. The result? The vintage lends itself to a crisper style, with flavors of lemon, pear and orange peel. Just the right time balance underscores the lush yet clean, fruit-driven wine with a hint of vanilla. Refreshing and dry, it is pure, unadulterated Chardonnay.
