In the everyday business of wine buying, it's not often that you're able to find a white Burgundy:

1. with a couple years of bottle-age on it

2. from a great vintage,

3. that is at its ideal drinking window, and

4. at an amazing price.

We first tasted the 2005 La Chablisienne Chablis Premier Cru La Singuliere back in October with the supplier. With three vintages of Chablis in their inventory (2005, 2006, and 2007) it was time for them to move the 2005 vintage out of the warehouse. Lucky for us (and you), the 2005 vintage Chablis were outstanding and just starting to drink at their best. We tasted six Chablis from different vineyards that they were looking to move. We bought a few of the Grand Cru, but what stood out the most for us was this little Premier Cru called La Singuliere. It was outstanding. Nice aromas of white fruits and plenty of peach and minerals on the palate. Very elegant and smooth with really good complexity yet still plenty of fruit.

Allen Meadows of the Burghound rated it 89 points and called it, "...more elegant and even aromatically purer with citrus and white flower aromas that precede textured and nicely concentrated flavors brimming with Chablis character...." He tasted the wine in 2007 and noted in his review to drink in 2010. Spot on, Allen; drink it while the drinking's good!

As one might reasonably expect, this is more elegant and even aromatically purer with citrus and white flower aromas that precede textured and nicely concentrated flavors brimming with Chablis character, especially oyster shell and iodine notes, all wrapped in a dry and energetic finish. An interesting wine and if not super complex, one that is certainly interesting for its varied character.
