Winemaker's Notes:
Vin Santo is the result of a careful selection of healthy, fully-ripe grape bunches which are left to raisin on specially-constructed racks for three months. After pressing, the must is transferred into small oak barrels ( known as caratelli ), where it ferments and matures gently for five years, gradually acquiring the fragrant aromas, a rich, golden hue and the exquisite taste of Tuscan Vin Santo.
Colour: amber. Aromas: almond, honey, apricot, dried fruits. Palate: dried fruits and honey with long gustative and olfactory persistence, the notes of sweetness are never cloying but supported by good acidity.
